Sochaczew Universalis IV 3.0

Greetings from Sochaczew on the Bzura River!

Recipe for the patient or those wanting to cultivate patience;)

Bigos

3 kg sauerkraut

20 dag bacon

50 dag pork

50 dag beef from a cutlet

30 dag regular sausage

20 dag smoked bacon

5 dried mushrooms

tomato concentrate

sweet paprika powder

1 heaping tablespoon marjoram

allspice

bay leaf

4 large onions

Boil the sauerkraut twice in a large pot, drain the water. In a separate pot, melt the bacon and throw in the cut pieces of meat. Brown the meat and add 2 sliced onions. Sauté and add a bit of water. Cook for about 15 minutes. This will result in a goulash. After cooking, pour the goulash into the sauerkraut, add a few bay leaves and allspice.

Now, proceed to cut the sausage and bacon. Put them on the melted bacon and add chopped onion. Simmer everything and throw it into the pot with sauerkraut.

Soak the mushrooms for 1 hour and cut them into strips. Add them to the pot with sauerkraut. Cook everything for 2 hours, add tomato concentrate, half a packet of powdered paprika. Cook for another 2 hours.

At the end of cooking, add marjoram and make a roux with 3 tablespoons of flour. Bigos will be even tastier if reheated the next day.
