I think it also mentions the programs that can be used to convert it to youtube suitable format
1) Ingame, either in TF2 or L4D, open the console.
2) Once you're in the console, type in 'record <demo name>'.
3) It will say that a demo is being recorded, then you can resume play.
4) To stop a demo, type into console 'stop'. Simple.
5) To watch a demo, type 'playdemo'. When you type this in, a list of demos will drop down for you to select.
6) Added tip : when a demo records, it does not record your own voice. To make your own voice audible, even when not recording a demo, type into console 'voice_loopback 1'. This enables you to hear your own voice when you talk.
I have yet to find out how to convert .dem files (which are the format of demo files recorded in TF2 and maybe L4D) into usable file types like .wmv
Once I do, I will post the how-to plus programs used here.
