ingredients
•1/2 lb macaroni
•♥♥♥♥-ton of salt
•3 tbsp butter
•3 tbsp flour
•3 cups whole (dont get anything else ♥♥♥♥♥) milk
•1 cup cheddar and 1 cup gruyere
•1 1/2 tbsp each of parsley and garlic powder
•pepper to taste
•parmesan to taste
directions
1-add salt to a water pot and boil
2-add the macaroni to the boiling water until al dente
3-the macaroni should be boiled by now - save a cup of the macaroni water and drain the rest using a colander and keep the boiled macaroni in it
4-put the pot back on the stove and put it on medium heat
5-melt the butter in the pot and mix in the flour for like 45 seconds (this is a roux; pronounced roo bc fr*nce)
6-slowly stir in the milk and keep stirring till velvetty and smooth
7-add the cheddar and gruyere and mix till smooth
8-stir in the boiled macaroni, pasta water, pancetta, parsley and garlic powder till evenly mixed
9-add pepper to taste
10-finally top it with some parmesan to taste when serving
