Why not try it on Jurassic difficulty first and if you fail then try medium first for practice?

As you know the park layout of Isla Pena has very limited space + extreme storms.

And since some carnivores have very low stress thresholds, prioritize dinosaurs that are easier to manage and DNA modification of stress inhibitors, longevity and other traits that increase the overall Dinosaur rating to draw more guests to the park.

To conserve space group carnivores that can coexist together peacefully. Unfortunately I don't have the notes I made anymore so you'll have to research on your own.

Even though they take up a lot of space, you need to have a ranger station in range of every enclosure to fix the enclosure (preferably) before dinosaurs get out as even with storm defense stations, a lot of fences will break or be broken by carnivores stressed out by the storm. Tranquilizing them and transporting them back after the storm stops takes a longer time and you want to normal operations to commence again ASAP.

When you build, keep in mind you need space for hotels and transportation. On Jurassic difficulty, you don't have time to deconstruct and rebuild the park. And, make sure to build guest buildings as soon as possible to generate more income, carnivores are expensive. And don't forget to check the management view (binoculars) regularly to monitor guest needs and make changes accordingly. You don't want to run out of money or be forced to halt your plans while you wait for the park to generate more income. Every second counts on Jurassic difficulty.

In the beginning focus on carnivore only fossils at dig sites first and try completing the genome of your star attractions ASAP for higher dinosaur ratings, longer lifespan and increased chance of a successful hatch. Then, every once in a while you can send extraction teams to dig sites that have both carnivores and herbivores, and simply sell all the herbivore fossils for extra income. Later when you have more carnivores at your disposal and more extraction teams, you can send one to a herbivore dig site for extra income, if needed.

Reject all contracts you know you can't complete yet and focus on the contracts you can complete. Contracts are one of your primary sources of income and vital for access to dig sites + research (and other things I may not recall). And try to establish a good reputation with each factions to avoid sabotage, etc.
